Tequila Designation of Origin (DOT)

Historical Background

The history of tequila dates back to colonial Mexico, when in the 16th century pulque, a fermented beverage made from agave, was already consumed by the indigenous peoples. With the arrival of the Spanish, distillation was introduced in the region of Nueva Galicia (today’s Jalisco, Aguascalientes, Nayarit, and neighboring areas), which allowed fermented beverages to be transformed into agave distillates, precursors of modern tequila.

The beverage gained special notoriety in the region of Tequila, Jalisco, which gave its name to the spirit. During the 20th century, as tequila grew in popularity and faced imitations in Mexico and abroad, the need arose to protect its authenticity.

• 1949 → The first Official Tequila Standard (NOM-006) was issued.
• 1973 → The Tequila Regulatory Council (CRT) promoted the request for the Tequila Designation of Origin.
• December 9, 1974 → The Mexican government published the official declaration in the Official Gazette of the Federation.
• 1978 → International registration before WIPO under the Lisbon System.

Today, the DOT covers 181 municipalities in five states: Jalisco, Michoacán, Guanajuato, Nayarit, and Tamaulipas.

The Tequila Designation of Origin (DOT) is a legal figure that protects the name “tequila” and establishes the conditions for its production. Recognized on December 9, 1974, this declaration guarantees that only products made in authorized regions and under strict standards may be called tequila.

The DOT ensures three essential pillars:
1. Geographic origin → Production only in delimited areas with unique terroir.
2. Raw material → Exclusively Agave tequilana Weber blue variety.
3. Regulated process → Compliance with NOM-006-SCFI.
